Peanut butter lovers, rejoice! January 24 is National Peanut Butter Day and today's recipe shows you just how many ways there are to enjoy peanut butter.
Some people like their peanut butter in cookies, some on a sandwich of white bread and jelly, and some right out of the jar with a spoon. Well, today we're going to show you how to make some delicious peanut butter waffles. Top these guys with sliced bananas and real maple syrup and you'll be in breakast heaven!
Seriously, this is one of the stand out recipes for this month. These guys are really good!

Peanut Butter Waffles
Ingredients
1 3/4 cups all purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp coarse salt
1/2 stick, melted unsalted butter (1/4 cup)
6 tbsp creamy peanut butter
2 cups buttermilk
2 large eggs
3 bananas, sliced
3/4 cup pure maple syrup
Directions
In large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix together peanut butter and butter until smooth. (Can also be dont in a blender)
Add buttermilk and eggs. Whisk until all blended together.
Add buttermilk mixture to flour mixture. Stir just until batter is combined.
Brush waffle iron with melted butter and pour in 1/2 to 3/4 cup of batter.
Leave 1/2 inch border on all sides.
Close waffle iron and cook until golden brown. (Approx 2 - 4 minutes.)
Remove from waffle iron. Top with bananas and warm maple syrup.
