Blueberry Pancake Recipe
Ingredients
1 cup all-purpose flour
1 tsp baking powder
1/8 tsp ground nutmeg
1/8 tsp ground cinnamon
1 tbsp sugar
1 egg
1/2 cup plain yogurt
1/2 cup milk
2 tablespoons vegetable oil
3/4 cup blueberries
Directions
Preheat griddle over medium heat.
Stir together flour, baking powder, nutmeg, cinnamon, and sugar, then set aside.
In a medium bowl, stir together egg, yogurt, milk, and oil.
Gradually stir in flour mixture.
Fold in blueberries.
Pour batter onto hot greased griddle a couple of tablespoons at a time.
Cook over medium until bubbles form, pop, and stay open.
Then, turn and cook on other side until golden.
Serve with warm maple syrup and enjoy!
