If it's January 3, that must mean that its [Drumroooooll]... National Chocolate Covered Cherry Day!
There's a pretty good chance that some of y'all might have received some chocolate covered cherries for Christmas as they're very popular around the holidays, and if you have, now might be a good time to dig in and enjoy one or two in honor of this national food day.
For the rest of you, Chef Cody Hickman is here with a quick and simple recipe for making this yummy snack using dark chocolate and dried cherries.
Here's what you'll need...
Chocolate Covered Cherries
1 cup Dark Chocolate Chips
1 cup Dried Cherries
1 tbsp vegetable oil
1 oz Amaretto
Sprinkle Powdered Sugar
In a medium sized bowl, melt the chocolate chips over a double boiler and whisk until smooth.
Whisk in the oil and the amaretto.
Remove bowl from heat and stir in cherries.
Using a spoon, remove the cherries from the bowl and set on baking sheet lined with parchment paper and sprinkle with powdered sugar.
Chill in refrigerator until firm.
